New Gluten free restaurant!!! in Del Mar

we recently found a gluten-free restaurant and wanted to pass along the information to you all.

We have been serving gluten-free dishes for all five years of our existence and I recently created a gluten-free menu (attached) which we have available to our guests in the restaurant and advertise as available on our lunch and dinner menus. We also post the gluten-free menu on our website in both an html and .pdf format, have separate buttons on our computer for the gluten-free menu to avoid confusion, and have either myself or the other manager double check that the items were made as requested by the kitchen before they head to the tables. In order to create gluten-free dishes we purchase a much more expensive gluten-free soy sauce but do not feel it fair to charge more for the plates, even though this affects our margins, so we do not. I look forward to hearing back and being a part of your wonderful resource. We have been making Gluten-Free dishes for the entire 5 years of our restaurant’s existence (and never had a complaint or reported incident of anyone becoming ill from our food, Gluten-Free or otherwise) 4. On our computers we have a section dedicated to our Gluten-Free items which specifically instructs the kitchen to make the dishes with our Gluten-free soy sauce and/or make other modifications as needed. Additionally the servers are required to notify the kitchen and one of the managers whenever a table requests a Gluten-free dish as an additional fail-safe. 5. How old can you go? thoughts of Dr. Roizen

“Disease prevention is not the same as wellness”  a quote from Dr. Roizen of the Cleveland Clinic.  Dr. Roizen’s Cleveland Clinic has been able to reverse chronic disease in over 80% of cases; and they did it through therapeutic lifestyle change programs.  Basically teaching people to eat right, exercise and decrease stress.  Sounds simple, but in reality most Americans have no clue how to eat right.

In the current Health Care Debate, it is refreshing to hear doctors, like Dr. Roizen talking about how we cannot just insure all our citizens with our current medical system.  Our current system is just not working.  We are currently ranked 37th in the world in health care as measured by how long we live, how many chronic diseases we deal with, and infant mortality.  Our current system is not working and to merely insure all Americans and use this same system is probably not the answer.

We need to quit poisoning ourselves with our food choices. We need to be taught how to shop for food; how to cook it and how to eat it!  This is where Therapeutic Lifestyle Change programs (TLC) or FirstLine Therapy programs (FLT) come into play.  These programs have been proven to clear chronic conditions.  You can google either of those terms and see research from the National Institutes of Health on how to reverse chronic disease or go to http://www.stopchronicdisease.com for information.

Health Care Debate – What can be done about it?

Health Care Debate:  How to Control Costs and Insure everyone

Over the past few months, I have noticed a lot of people are talking on T.V., on public radio (www.NPR.org) , in movies, in the Senate, House of Representatives, the White House and in the community about health care reform, national health insurance and what can be done about it; how can we get health care to all our citizens and control costs.  There are people talking about it from many angles.  I’ve seen excellent viewpoints from sources as varied as movies, Food Inc (www.foodincmovie.com)  Sweet Misery (http://video.google.com/videoplay?docid=-6551291488524526735) , and Bananas (http://www.bananasthemovie.com/) and the former editor-in-chief of the New England Journal of Medicine and retired M.D. Arnold Relman (http://www.npr.org/templates/story/story.php?storyId=106470889)  as well as Jeff Bland, PhD lead scientist from Metagenics http://www.metagenics.com/pdf/publications/200903%20bland%20-%20reforming%20the%20us%20health%20care%20system.pdf and they all have very good ideas.

I think we need a multi-faceted approach, which includes all of these viewpoints which I’ll summarize below:
1.  Removing the Profit from healthcare – Insurance company CEO’s don’t need to make 100’s of millions of dollars a year.  Elizabeth Edwards has been quoted as saying that one year, out of every $700 spent on healthcare in the United States, $1 went to the CEO of United Health Care insurance company.  If you google “pay rate of health care CEO’s” you will see that each of these CEO’s make over $100 million / year.  We need to take this kind of profit out of the health care business.  Perhaps insurance companies need to go away as Dr. Relman believes.
2.  We need to quit poisoning our population; Estimates are that 21 million Americans now have type II diabetes (8% of the population) and many more have pre-diabetes.  The Centers for Disease Control,(CDC) estimates are that one in three children born in 2000 will be diabetic (http://www.cbsnews.com/stories/2003/06/14/eveningnews/main558728.shtml) . This is directly related to the food we eat.  The movies above describe how this happened and how we can reverse it.  If we don’t reverse it there is no way we can control health care costs, but more importantly we’ll be killing off our kids!  As a nation, we absolutely need to change the “food” we’re putting in our bodies.
3.   We need to change the way we treat the 80% of people who now see doctors for chronic diseases.  The current medical model does not work. The pharmaceutical industry spends over $5 billion dollars on advertising a year for medicine that at best controls some symptoms but does nothing to fix the problems. Chronic diseases are directly related to lifestyle and reversing these diseases has been done and written up in peer reviewed medical journals.  This is not new information.  This is known and well documented.  Many M.D.s and other health care practitioners are using these “Lifestyle Change Programs” to actually cure chronic diseases ranging from heart disease, diabetes, and auto-immune conditions.  You can read about this research at www.metagenics.com and there is a newsletter on the implications of diet and disease at http://www.theburnhamreview.com/Mission_Hills_Gluten.html

So there it is!  I find hope in the fact that these ideas are reaching the mainstream and ending up in a lot of people’s conversations and debates.  Please share your views and Vote with your $ for food, and healthcare decisions!

Why Nutrasweet (aspartame) is to be avoided at all costs

Hi everyone,  There is so much data now on why Nutrasweet (aspartame) is to be avoided, it’s amazing it is still on the market.  I found a blog of someone with a diagnosis of fibromyalgia who is going to get off Nutrasweet and see what changes she notices.  I would recommend watching the movie “sweet misery” http://video.google.com/videoplay?docid=-7757697555859118501 is a documentary on how nutrasweet was developed and how the FDA pushed it through despite all research linking it to brain tumors and siezures.  It’s disturbing but if any of your friends or family members have neurological symptoms please get them off this stuff.

Matrix Energetics – The Science and Art of Transformation – Advanced Integrative Manual Therapist Kim Burnham, MT, PhD at MHPT

Hi all

We are fortunate to be able to bring in to our clinic Kim Burnham, MT, PhD, advanced practitioner in Integrative Manual Therapy © and Matrix Energetics.

She has advanced skills in Integrative Manual Therapy with neurodegenerative disorders and vision therapy and will be working with us January 5th – 15th, 2009.  Susan at our office will be printing up her bio but I will post it at on a separate post.    Please feel free to pass this along to anyone who may need her help.

community evening: testing your food and supplements yourself

we will be doing a community evening at the end of this month to show you all how to test your own food and supplements for yourselves. You can learn how to tell whether or not your body is able to process and eliminate foods and supplements and whether or not you are allergic to it. Gluten Sensitivity Research – If you have an auto-immune problem you need to read this.

As we have been seeing a rise in gluten sensitivity and as we have been helping our patients recover their health by eliminating gluten, we have looked to the medical and scientific research on gluten sensitivity and found that a search of celiac disease shows over 14,000 research articles on this topic.

What we found in our search is that gastro-intestinal problems account for a small minority of the signs and symptoms of celiac disease or gluten sensitivity. Most problems related to gluten are neurological, heart, bone, endrocrine, behavioral or autoimmune in nature. In fact what we found was that most of these diseases and conditions could be called auto-immune diseases and implicate gluten sensitivity as a probable cause.

We have seen remarkable recovery from even severe cases of pain and disability from osteoporosis within 3 weeks of adherence to a gluten free diet (GFD). I have a case right now of a patient who was unable to be up for more than one hour at a time due to severe pain as a result of osteoporosis. She is after 3 weeks of being gluten free, reporting the ability to be up for the entire day, until 4:30 pm, and told me on her last visit that “it’s not that bad anymore”. We will continue to work with her to help her achieve her goals but her improvements in function are very good to this point.

We have the benefit now of having the research presented in a concise manner by Dr. Thomas O’Bryan, DC, chiropractor and nutritionist who has done a wonderful job of compiling the research and presenting it in a user friendly way.
